Mandarin and Chocolate Truffles
We need the zest of ½ a mandarin, cream (150ml), glucose (40gr), dark chocolate (250gr), butter (50gr), cloves (3 cloves), and bitter cocoa.
Crush the cloves (with a mortar if available or otherwise with a mixer) and mix the grated clove in a bowl with the mandarin zest and the cream. Then, place the mixture in a well-closed container and leave in the fridge overnight (or alternatively for at least 6-7 hours). Then take the mixture out of the fridge and leave it for a while to reach room temperature. Next stir and heat over low heat in a saucepan, together with the glucose. Melt the chocolate in a bain marie and then add the cream from the pan and stir with a whisk until it becomes a smooth thick mixture. Take the mixture off the heat and leave to cool for about 5 minutes.
Cut the butter into small cubes and add to the mixture. Mix with a whisk or a mixer until it is a smooth cream without lumps or bubbles. Let the mixture cool until it thickens (You can also put it in the fridge).
Put the cocoa in a bowl. Make the mixture into balls and then cover well in the cocoa. The truffles are ready to serve.
Orange cake
We need oranges (2) orange marmalade (3 tbsp) flour (250gr), sugar (150gr), eggs (3) melted butter (100ml), almond powder (2 tbsp), yeast powder (1/2 small packet), vanilla (1 vial).
Peel the oranges and remove the seeds and the white part inside. Beat them lightly in the mixer. Beat the eggs and sugar in the mixer until they form a frothy mixture. Then add the vanilla and the butter you have already melted. Next, gradually add the flour and the yeast, stirring with a spatula. Finally, add the juice from the oranges.
Put the whole mixture into a buttered cake mould which is sprinkled with flour. Place in a preheated oven (about 180 ° C for half an hour). Heat up the orange marmalade slightly and, when you take the mould from the oven, spread it on the cake. Switch off the oven and put the cake back in. Leave it there until the oven cools completely. Finally, sprinkle the almond powder on the cake.
Salad with kiwifruit, mandarins and nuts
You will need baby spinach, rocket, 1 persimmon, 2 kiwifruit, 2 mandarins, 15 unsalted pistachios, 2 tbsp flaked almonds, 5 tbsp orange juice, 3 tablespoons olive oil, salt and pepper..
Wash the rocket and spinach thoroughly and cut one kiwifruit, the persimmon and mandarins into pieces. Then mix them all in a large bowl and add the pistachios and flaked almonds, cut into small pieces. Mix one kiwifruit, the orange juice, oil, salt and pepper in a mixer to make the dressing. Put the lettuce mixture in a large salad bowl and pour over on the dressing.
